Perfect Pecan Treats

This holiday season, treat your friends and family to these perfect pecan treats.

Pecan Raisin Oatmeal Cookies
(Makes 30-35 cookies)
  • 1 1/2 cups pecans
  • 1/2 pound (2 sticks) unsalted butter, at room temperature
  • 1 cup dark brown sugar, lightly packed
  • 1 cup granulated sugar
  • 2 extra-large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • 3 cups old-fashioned oatmeal
  • 1 1/2 cups raisins
Preheat oven to 350 degrees Fahrenheit. Place pecans on a baking sheet and bake for 5 minutes until crisp. Set aside to cool, then chop coarsely.

Using a paddle attachment, beat the butter, brown sugar and granulated sugar together on medium-high speed until light and fluffy. Switch to low speed and add eggs, 1 at a time, and vanilla.

Sift flour, baking powder, cinnamon and salt into a medium bowl. With the mixer on low speed, slowly add dry ingredients to the butter mixture. Add oats, raisins and pecans and mix just until combined.

Drop 2-inch mounds of dough onto baking sheets lined with parchment paper. Flatten slightly with a damp hand. Bake 12-15 minutes until lightly browned. Transfer to a baking rack and cool completely before serving.


Spiced Pecans
(Serves 6-8)
  • 1 teaspoon kosher salt, plus more for sprinkling
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon sweet paprika
  • 2 tablespoons (1/4 stick) unsalted butter
  • 1/4 cup (packed) light brown sugar
  • 1 tablespoon soy sauce
  • 2 cups pecan halves
Preheat oven to 325 degrees Fahrenheit. In a small bowl, mix salt, chili powder, cumin, allspice, cayenne, cinnamon and paprika. Add butter to large skillet over medium-high heat. When butter is melted, add sugar and soy sauce. Stir together to melt, then stir in spice mixture.

Add pecans and toss until the butter is absorbed (2-3 minutes). Spread on a rimmed baking sheet and bake until fragrant and toasted and the coating is caramelized (15 minutes). Cool the pecans slightly before serving warm.
