Grilled Cheese Makeovers

While the old-fashioned grilled cheese sandwich is a classic for good reason, there's also lots of culinary excitement to be experienced in trying new tastes. Here are two great twists to enjoy.

Tomato, Avocado and Pesto Grilled Cheese
(Serves 2)
  • Butter, slightly softened
  • 4 slices of whole grain bread
  • 4 slices of American cheese
  • 1 Roma tomato, sliced thin
  • 1 ripe avocado, halved, pitted and sliced thin
  • Fresh sliced or shredded mozzarella
  • Your favorite pesto sauce
  • Balsamic glaze
Lightly butter 1 side of each bread slice. Place 2 of the bread slices buttered side down on work surface. Top each with 2 slices of American cheese, tomato and avocado then desired amount of sliced or shredded mozzarella. On the dry side of the 2 remaining slices of bread, spread a thin layer of pesto sauce, then place pesto-side down on top of sandwiches.

Melt a 1/2 tablespoon of butter in a pan or skillet on medium-low heat. Add sandwiches and press with the back of a spatula to help evenly cook. Cover with a lid just until cheese begins to melt. Uncover, raise temperature to medium and continue cooking (about 3 minutes), until bottom bread is golden brown. Flip once and cook until second side is golden brown. Remove from pan and drizzle with balsamic glaze. Cut on a diagonal and enjoy immediately!


Ultimate Grilled Cheese
(Serves 2)
  • Butter
  • 4 slices country white sourdough bread
  • 4 thin slices prosciutto
  • 8 large fresh basil leaves
  • 8 slices young Asiago cheese or drained fresh mozzarella cheese
  • 1/4 teaspoon dried crushed red pepper
  • 2 tablespoons olive oil
  • 6 slices heirloom tomato
Preheat oven to 400 degrees. Lightly butter 1 side of each bread slice. Place 2 slices buttered side down on work surface. Top each with 2 prosciutto slices, then 4 basil leaves, then 4 cheese slices. Sprinkle with salt and crushed red pepper. Top with remaining 2 bread slices, buttered side up.

Heat olive oil in heavy large ovenproof skillet over medium-high heat. Add sandwiches to skillet and cook until golden on bottom, about 4 minutes. Turn sandwiches over; transfer skillet to oven and bake until golden and cheese melts, about 5 minutes. Remove from oven.

Carefully lift off top bread slices from sandwiches and insert 3 tomato slices into each, then cover with bread tops and serve.
