Chilaquiles for Breakfast, Lunch, or Dinner

Chilaquiles is a traditional Mexican dish that consists of lightly fried pieces of corn tortillas. This flavorful and filling dish makes for a great breakfast, lunch, or dinner.

Ingredients:
  • 2 cups of corn tortilla chips
  • 4 cups of enchilada sauce
  • 4 large eggs
  • 1 avocado, sliced or diced
  • 1/4 cup of diced red onion
  • Crumbled queso fresco cheese
  • 1 lime, cut into wedges
  • Salt, to taste
Directions:
  1. Heat canola oil in a skillet over medium-low heat. Crack the eggs into the skillet and cook. As the whites begin to set, spoon the hot canola oil over the whites until they're cooked. Remove the pan from the heat and set aside.
  2. Heat a 10-inch cast iron skillet over medium-high heat. Add the enchilada sauce to warm it up, and then add the chips. Toss the chips to evenly coat them in the sauce. Cook for 1 to 2 minutes to slightly soften the chips. Remove the skillet from the heat.
  3. Top the chips with the eggs and garnish with the avocado, red onion, queso fresco cheese, lime, and salt.
