Try this mint, cucumber, and tomato sandwich for an easy, delicious lunch. Serves: 4 Ingredients: 3 tbsp softened butter 8 slices of sourdough bread 1 large cucumber, sliced 2 medium tomatoes, sliced 1/4 tsp salt 1/8 tsp pepper 1/4 cup fresh mint leaves Directions: 1. First, take the softened butter and spread it evenly on four slices of the sourdough bread. 2. Then, layer the cucumbers and tomatoes, covering the buttered bread. 3. Next, sprinkle with the salt, pepper, and mint leaves. 4. Finally, add the last four bread slices on top to complete the sandwich. Source: TasteOfHome.com
