Esquites

Esquites

Esquites are one of the most popular street foods in Mexico, served from food trucks, at street fairs, and from food stands. They have just a few ingredients, with corn kernels serving as the main ingredient, since "esquites" translates to "toasted corn."

Some versions also feature additional flavors from cotija cheese, lime, and chili powder. They're best eaten hot, but you can also enjoy them cold. Basically, you can make the esquites to whatever your palate desires. This recipe, which makes eight esquites, takes 20 minutes to prepare and cook.

Ingredients

  • 3 tablespoons butter
  • 1/2 white onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 6 cups white corn kernels
  • 5 cups water
  • Salt to taste
  • Epazote, optional

Accompaniments

  • 1/2 cup cotija cheese
  • 1/2 cup Mexican crema
  • 1/2 cup mayonnaise
  • Lime juice, to taste
  • Hot sauce or chili powder, to taste

Directions

  1. Add the butter, onion, and garlic to a frying pan. Cook until the onion is translucent.
  2. Add the corn kernels and cook for 5 minutes over medium heat.
  3. Combine the water, salt, and optional epazote with the mixture. Let it boil for 20 minutes.
  4. Serve the finished product in cups, and add the accompaniments, if desired. Stir well. Serve hot.
