Great Guacamole and Fruit Salad with Lime Yogurt Dressing

A party staple, this Great Guacamole is a surefire crowd pleaser. Plus, try this healthy fruit salad with a twist—lime yogurt dressing. It's a unique add-on to any plain ol' fruit salad.


Great Guacamole
  • 2 to 3 medium to large-sized avocados, halved and seeded
  • 3 tablespoons freshly squeezed lime juice
  • 1 clove garlic, finely chopped
  • 1/3 cup red onion, finely chopped
  • 1 jalapeño chili, seeded and finely chopped
  • 1 small tomato, seeded and chopped small
  • 1/3 cup cilantro, finely chopped
  • Kosher salt and freshly ground black pepper
  • Extra virgin olive oil
Brush the insides of the halved avocados with olive oil and grill (cut side down) over a medium flame for 1 to 2 minutes, or until grill marks are achieved. Allow the avocado to cool. Remove the skin and cut into 1/2-inch cubes.

Place all of the ingredients into a mixing bowl, season liberally with salt and pepper and mash lightly until all the ingredients are incorporated. This guacamole is best served on the chunky side.


Fruit Salad with Lime Yogurt Dressing
  • 5 cups of assorted ripe fruit cut into bite-sized pieces (pineapple, melon, berries, apple, pear, kiwi, etc.)
  • 1 cup vanilla yogurt
  • 2 tablespoons honey
  • 1/4 cup freshly squeezed lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon mint leaves, finely chopped
In a bowl, combine yogurt, honey, lime juice and zest. Mix well and chill for one hour. In a bowl, combine the cut up fruit with the chilled dressing. Toss well and allow the salad to sit for 10 minutes at room temperature. Garnish with finely chopped mint and serve.
