The Summer of Shrimp

Whether you're looking for simple-to-prepare sea fare, a meal on the lighter side or a date-night delight that's sure to impress, look no further than the summer shrimp dishes below.

Shrimp, Mango and Avocado Salad
(Serves 4)
  • 1 pound medium shrimp, peeled and deveined
  • 1 tablespoon vegetable oil
  • 5 cups arugula
  • 1 avocado, sliced
  • 1 mango, diced
  • 1/2 red onion, diced (optional)
  • 1/4 cup extra-virgin olive oil
  • Juice of 2 limes
  • Pinch of sugar
  • Pinch of cumin
In a large skillet, heat oil over medium-high heat, then cook shrimp until opaque (4-6 minutes). In a salad bowl, combine arugula, shrimp, avocado, mango and onion.

In a jar or small container, combine olive oil, lime juice, sugar and cumin and shake until combined. Add dressing to the salad and toss all ingredients until coated.


Shrimp Salad Stuffed Avocados
(Serves 4)
  • 2 avocados, pitted
  • 2 tablespoons extra-virgin olive oil
  • 1/2 pound raw, deveined shrimp (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn (fresh, frozen or canned)
  • 1/4 cup Greek yogurt
  • Juice of 1 lemon
  • Kosher salt
  • Freshly ground black pepper
  • Basil, for garnish
Scoop avocados, leaving a small border around the edges. Dice scooped avocado and set aside. In a skillet over medium-high heat, heat olive oil then cook shrimp until opaque (4-6 minutes). Let cool, then chop into bite-size pieces.

In a large bowl, toss ingredients. Season with salt and pepper. Divide among avocado halves. Garnish with basil.
