Marvelous Muffins

Marvelous Muffins

When you have a hankering for moist and fruit-studded muffins, nothing else will do. The recipes below make for a perfect breakfast, after-school snack, or dessert the whole family will enjoy.

Blueberry Cinnamon Muffins
(Makes 12)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup sugar
  • 3 eggs
  • 1 cup sour cream
  • 2 cups blueberries, fresh or frozen
  • Zest of 1 lemon
Preheat oven to 350 degrees Fahrenheit. Sift together flour, baking powder, baking soda and salt in a medium bowl and set aside. With the paddle attachment of a mixer, cream together the butter and sugar on medium-high until light and fluffy (approximately 3-5 minutes). Add the sour cream and mix well. Add the dry ingredients and mix until just combined (do not overmix). Fold in the blueberries and add lemon zest.

Spoon batter into a buttered or greased muffin tin. Bake until muffins have browned and a toothpick inserted comes out clean (about 18-20 minutes). Remove and cool for 5 minutes in the pan, then turn them out onto a rack to finish cooling.


Apple Muffins
(Makes 12)
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar, divided
  • 1 large egg
  • 1 cup buttermilk; or 1 cup plain (not Greek-style) yogurt; or 3/4 cup plain Greek-style yogurt plus 1/4 cup milk
  • 1 cup white whole wheat flour
  • 1 cup unbleached all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 2 cups peeled, cored and chopped apples (about 2 large apples, about 3/4 pound whole apples)
Preheat oven to 375 degrees Fahrenheit. Grease and flour a 12-cup muffin pan or line with papers and grease the insides of the papers. Beat butter, granulated sugar and 1/4 cup of the brown sugar until fluffy. Add egg and mix well, scraping in the sides and bottom of the bowl. Slowly mix in buttermilk or yogurt. Stir in flours, baking powder, baking soda, salt and cinnamon. Fold in chopped apples.

Spoon batter into prepared muffin cups and sprinkle remaining 1/2 cup brown sugar on top. Bake until muffins have turned brown and a toothpick inserted comes out clean (about 25-30 minutes). Remove and cool for 5 minutes in the pan, then turn them out onto a rack to finish cooling.
