Keto-Friendly Concoctions

Keto dieting has been around for a long time. While there are many great keto-friendly concoctions, we think you may enjoy making these three in particular:

Cauliflower Hash Browns

Makes six hash browns

Ingredients:
  • 3 cups of cauliflower
  • One large egg
  • 3/4 cup grated cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
Preheat the oven to 400 degrees Fahrenheit.

Grate the cauliflower, cook it, and set aside to cool. Remove excess water from the cooked cauliflower. Combine the cauliflower with the rest of the ingredients in a bowl. Form six square-shaped hash browns, and place them on a greased baking tray. Bake for 15 to 20 minutes. Cool for 10 minutes to firm them up before serving.

Almond Cookies

Makes eight cookies

Ingredients:
  • 3 teaspoons unsweetened almond butter
  • 1/2 large egg
  • 1 1/2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 packet stevia
  • 16 almonds
  • 1/2 cup shredded coconut
  • 1.5 ounces dark chocolate (85 percent)
Preheat the oven to 350 degrees Fahrenheit.

Mix the almond butter, egg, coconut oil, vanilla, salt, and stevia until combined. Mix in the coconut. Form eight balls and place them on a greased baking tray. Press two whole almonds on top of each cookie. Bake for 10 minutes. Melt the chocolate and drizzle it over the cooled cookies. For the best texture, store them in the freezer or the refrigerator.

Salami and Cream Cheese Pinwheels

Makes 20 pieces

Ingredients:
  • 1.8-ounce block cream cheese
  • 8-10 thin slices of salami
  • 4 tablespoons of diced pickle
Whip room temperature cream cheese until fluffy, and spread it as a 1/4-inch thick rectangle in the middle of a piece of plastic wrap. Spread pickles. Lay meat over the cream cheese. Cover with a second sheet of plastic wrap, and gently flip it over, so the cream cheese is now facing the top. Peel the plastic wrap off the cream cheese. Gently roll the mixture into a log shape, removing the plastic wrap as you roll it. Refrigerate for at least four hours or overnight. Cut into slices once cooled and set.
