Fresh Recipes to Help You Eat Healthy this Spring

Spring is an excellent time to work on your health, starting with the food that you eat. Here are some of the tastiest, freshest recipes you should try out this spring.

Spring Onion Frittata (Serves 3)
  • 6 eggs
  • 1/4 cup of water or milk
  • Olive oil
  • 3 to 4 chopped spring onions
  • 1/4 cup of chopped asparagus tips
  • 1 minced garlic clove
  • 1/2 cup of frozen peas that have been thawed
  • 1/4 cup of fresh mozzarella in pieces
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of chopped tarragon
  • Pepper and salt
  • Red pepper flakes
Preheat your oven to 375°F. Sauté your asparagus and onion pieces in olive oil with pepper and salt. Once sautéed, remove the pan. Use a blender to blend your water, eggs, salt, pepper, and garlic to a light and foamy mixture. Clean your skillet, coat it with olive oil, and then pour in your eggs with half of the cheese and vegetables.

Bake the skillet for 10 minutes or until it sets but the top is uncooked. Take out the skillet, add the rest of the cheese and veggies, and then bake for between 10 and 15 minutes. Sprinkle the top with red pepper flakes and tarragon to taste.

Grilled Heirloom Tomato and Goat Cheese Pizza (Serves 6)

  • 1 can of refrigerated pizza dough crust
  • 1 halved garlic clove
  • 1 large seeded and chopped heirloom tomato
  • 1/2 cup of shredded mozzarella cheese
  • 3 ounces of crumbled goat cheese
Set your grill to medium heat. Coat a large baking sheet with cooking spray and then unroll the pizza dough. Coat the dough lightly with cooking spray. Place the dough on a grill rack and then grill until lightly brown. Turn over the crust, rub it with garlic, and then add both of the cheeses and the tomato. Close the lid of the grill and then let the pizza cook for three minutes.
