Peach and Prosciutto Flatbreads Ingredients:
Heat the grill to medium. Divide the pizza dough in half and make two 5- by 14-inch rectangles. Toss the peaches with oil, salt, and pepper. Grill the dough and peaches for 3 to 5 minutes on each side, until they're lightly charred, then transfer the peaches to a large bowl and the pizza dough to a cutting board. Toss the peaches again with lemon juice, tarragon, and arugula, and sprinkle the Gruyere over the dough. Grill it until the cheese is melted, around 2 or 3 minutes.
