Peach and Prosciutto Flatbreads

Peach and Prosciutto Flatbreads

Fire up the grill to make these simple tasty peach and prosciutto flatbreads that the whole family will love.

Ingredients:
  • 1 pound of pizza dough
  • 3 peaches or nectarines cut into 8 wedges each
  • 1 teaspoon of olive oil
  • 1/4 teaspoon of salt and pepper
  • 2 tablespoons of fresh lemon juice
  • 2 teaspoons of chopped tarragon
  • 3 ounces of grated Gruyere cheese
  • 2 cups of baby arugula
  • 4 ounces of thinly sliced prosciutto
Instructions:

Heat the grill to medium. Divide the pizza dough in half and make two 5- by 14-inch rectangles. Toss the peaches with oil, salt, and pepper. Grill the dough and peaches for 3 to 5 minutes on each side, until they're lightly charred, then transfer the peaches to a large bowl and the pizza dough to a cutting board.

Toss the peaches again with lemon juice, tarragon, and arugula, and sprinkle the Gruyere over the dough. Grill it until the cheese is melted, around 2 or 3 minutes. Finally, top the cheesy pizza dough with the prosciutto and the peach-arugula salad.
