Winter Cranberry Spice Cake

Imagine the perfect dessert that embodies so many flavors that remind you of winter, and you'll end up with this delicious cranberry spice cake. The tart cranberries give the cake a delicious flavor — so much so that you don't even need icing or another topping. Gather just a few ingredients, and in about an hour, you'll be ready to bite into this perfectly sweet spiced cake.

Ingredients

  • 3 eggs
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon whole nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 12 ounces fresh cranberries
  • 3/4 cup butter, softened
  • 1 teaspoon vanilla
  • 1 teaspoon orange extract or 1 1/2 teaspoons orange zest
  • 2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350 F. Use a mixer to beat the eggs, sugar, and all spices until the mixture is slightly thickened and light in color. It should take 5 to 7 minutes. The mixture should almost double in size, and when you lift the beaters from the bowl, the mixture should form a ribbon.
  2. Add the butter, vanilla, and orange extract if desired. Mix for 2 more minutes. Stir in the flour until just combined. Add the cranberries, and mix thoroughly.
  3. Spread the mixture into a 9x13 pan. Bake for 44 to 50 minutes or until lightly browned. Insert a toothpick into the cake to determine doneness. If it comes out clean, the cake is ready. Let the cake cool completely before you cut it into small slices. Enjoy!
